Typical Use:
Sorghum is a versatile, gluten-free ancient grain with a nutty flavor and chewy texture, ideal for salads, breakfast porridge, and risotto. To cook whole sorghum grains, soak sorghum for 6-8 hours for faster cooking and better digestibility.
Use a ratio of three parts water or for savory dishes add broth to one part grain.
Bring the liquid to a boil in a large pot, add the grains, and then reduce the heat to a simmer, covering the pot tightly. Simmer for approximately 45 to 60 minutes, or until the grains are tender yet retain a pleasant, chewy texture similar to pearled barley. Drain any excess liquid and fluff the grains with a fork before serving.
Cook a large batch and store in the fridge for up to a week; it holds its shape well, making it ideal for meal prep.
Alternatively, you can “pop” sorghum just like popcorn by heating the dry grains in a covered pot over medium-high heat until they burst into miniature white puffs.
